Meet the Chef: Fergus Wilford
Fergus Wilford is the first chef in residence at The Grosvenor Arms. He runs the kitchen for the first couple of months after we open. Here is who he is and where he has cooked.
The kitchen at the pub works as a residency. Chefs come in for a stretch and cook their own menu in a pub kitchen on Garratt Lane. Fergus is our first Chef-in-residence.
Where he has cooked
Fergus has spent his career in some serious London kitchens. He cooked at Cliveden under André Garrett, was senior sous chef at the Savoy Grill by Gordon Ramsay, and was head chef at Fallow in St James’s.
Since Fallow he has been cooking residencies around London, including at Naughty Piglets in Brixton and Giacco’s in Highbury. At Giacco’s that meant citrus-cured grey mullet with plums, cod cheeks with a mussel tartare sauce, and potato wotsits with chive emulsion.
What he is cooking here
Produce-led cooking. Familiar dishes. Unexpected flavour.
Where possible, we will buy whole carcasses and whole produce, making the most of every ingredient through careful butchery, preparation and thoughtful cooking.
Fergus’ focus is simple: exceptional flavour, consistency and attention to detail.
This is pub food, cooked by someone who has run very good kitchens.
Watch the episode
Fergus gets his own episode in our behind-the-scenes series on the rebuild: Episode 4, Get Yourself a Great Chef.
